We love to make whole wheat bread. Here's my recipe! I suggest a strong mixer - there are many on the market, and while I use a Bosch currently, there are other mixers that are equally good. A strong motor will give better long-term use. I also mill wheat using the Nutrimill. Wheat berries can be found online, co-op, or Azure Standard (find a local drop!) I've always used Prairie Gold by Wheat Montana, a white hard wheat.

The recipe for 2-3 loaves:

2 c. Warm Tap Water

3 c. Milled Whole Wheat Flour - First Addition

1 Tbsp. Dough Enhancer

1/4 c. Olive Oil

2 Tbsp. Honey

1 1/2 Tbsp. Yeast

5 c - 6 c. Additional wheat flour

3 tsp. Sea Salt

Instead of putting the instructions here, I'm going to refer you to the post on the blog, How to Make Whole Wheat Bread. It has step-by-step pictures and instructions, it's for 6 loaves, but the instructions are the same.

I'm happy to guide anyone (the best I can!) who needs some help! Just ask...

My pictures have cinnamon wheat bread. The filling is easy. Simply roll out the portioned dough for the loaf into a rectangle. On top, spread GOOD butter, brush with maple syrup, sprinkle 1/2 c. brown sugar, and spices. Cinnamon, cloves, your choice. Roll the dough back into a loaf and bake. And make a latte :)

This recipe comes from several brioche recipes I had collected and combined. The way the ingredients are added is rather odd but it works perfectly.

In this bread recipe, the ingredients are added differently, and it comes out perfect. Some tips... The dough is half-mixed when you add the eggs, so don't beat on high or you'll have egg spurting from the lid. Mix everything gently in the order stated and I think you'll be very happy with this recipe. If you have any questions just post. I've been making bread a long time and can probably help you troubleshoot it.

I do have a whole wheat bread-making tutorial on the blog - the tricky part of this recipe is adding the flour, so scroll down to the adding the flour part to get some ideas on when it's enough.
